    Fresh Fig Cookies

    A nice moist and soft cookie for a lovely afternoon.

    1 cup brown sugar sugar
    1/2 cup butter
    1 egg
    2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon kosher salt
    1/2 teaspoon ground clove
    1 cup fresh figs, peeled and chopped
    1/2 cup chopped walnuts

    · Preheat oven to 350 degrees F (180 degrees C).

    · Cream sugar and butter and add beaten egg.

    · Sift dry ingredients and blend with creamed mixture. Fold in figs and nuts.

    · Drop by spoonfuls on greased sheet. Bake for 15 to 20 minutes.

    Chef’s Secret:  Always be ready to have warm from the oven cookies at a moment’s notice.  Use a small scooper to scoop cookie dough on to a large baking sheet, no need to leave much space in between.  Freeze for at least an hour.  The frozen scoops will stay for a month in a labeled, with cooking instructions, Ziploc bag for you to use whenever the need arises :)
